• Was a Second-Team All-Pac 12 selection and a semifinalist for the John Mackey Award in 2019 after hauling in 48 passes for 589 yards and one touchdown as a junior. He started all 12 games for the Cardinals that season.
• As a sophomore in 2018, earned All-Pac-12 honorable mention and recorded 29 catches for 485 yards and seven touchdowns.
• Registered an eight-yard touchdown pass against Oregon State in 2019 and became the first Stanford non-quarterbak to throw a touchdown pass since Christian McCaffrey in the Pac-12 Championship in 2015. He also became the first Cardinal to throw for a touchdown and record a touchdown reception since McCaffrey in that Pac-12 Championship game.
• Parkinson's seven touchdown receptions ranked third in the nation among tight ends that season.
• Tied a single-game school record with four touchdown receptions (a program record for tight ends) against Oregon State in 2018.
